Thai red curry beef

Ingredients for the Thai curry paste

16 dried chillis

2 tbspn lemongrass

1 tbspn galangal peeled and grated

4 garlic cloves

1/2 tspn ground coriander

1/2 tspb ground cumin

1 tbspn chopped coriander

2 chopped red shallots

1 teaspoon lime zest

Ingredients for Thai Red Curry beef


2 lbs casserole beef

2 teaspoons chopped thyme

1 teaspoon basil

3 cloves chopped garlic

11 cup thai red curry paste

1/2 tablespoon coconut oil

1 boullion cubes

1/4 cup chopped onions

1 1/2 cups coconut milk

Extra salt and hot chillis to taste


Method:


  1. Season the meat with thyme, basil, chopped garlic

  2. Heat a pan with the coconut oil

  3. Stir in the beef and sear

  4. Add the red curry paste, 1 boullion cube and 1 cup coconut milk

  5. Simmer until beef is tender

  6. Add chopped onions and rest of coconut milk

  7. Simmer another 5 minutes on low until onions are cooked and sauce is thick and rich
